By day the room is all white linen and sea light. After eight the panels fold back, the felt tables open and the kitchen shifts to its midnight card — dinner and play running on the same clock.
Lunch runs 12:00–15:00 — oysters, chilled whites and the terrace catching the ocean breeze. The dining room at full light is a different establishment entirely.
From 20:00 the salons open, the bar shifts to stirred-down classics and the midnight menu takes over — wagyu bites and caviar bumps served felt-side.
Membership is capped at 240 names. Each tier opens the house a little wider — from priority tables to a private entrance and a named butler.

Three salons above the dining room, each with its own croupier, captain and service line. Hover the markers to walk the floor before you arrive.
The quietest room — commission-free banker on Fridays.
Tuition-friendly — dealers coach the rhythm, not the odds.
Metrologist-certified wheel, balanced weekly.
A Noir member settled a winning baccarat shoe by ordering the whole kitchen for a private paella on the terrace at 2am. The kitchen obliged.
One Friday table hit all four flavour quadrants in sequence — the first documented 'full house' of chef's roulette this year.
A guest won the salon maximum, finished his crème brûlée, and left by the cellar door without a word. We respect it.
From 16:00 the terrace runs sunset service — spritzes, crab crumpets and oysters while the light does the work. Sunset tonight is timed below; the best seats go first.
A second salon exists behind the cellar corridor. Entry requires the week's password — earned by answering the house riddle.
This week: "I am found where the tide keeps its jewellery — hidden in the shell, worn by the patient."
Correct answers notify the concierge — the cellar map arrives by message.
Twelve seats, one brass wheel, four concealed courses. The spin decides what the table eats — the kitchen plates every possibility live.
A casino-tolerance brass wheel decides each course — ocean, earth, smoke or acid. The losing quadrants retire to the staff meal.
No money is wagered — only appetite. A quadrants upset can put dessert before the roast, and the sommelier spins for pairings.
Fridays only, twelve seats, thirty days ahead. Members receive forty-eight hours of early allocation before the public list.
Cryptic dining removes the menu entirely — guests choose a profile, never a dish. Courses arrive unnamed; the palate does the guessing.
Seven courses of reef, shell and salt.
Game, charcoal and tablelands produce.
The plant kingdom, taken seriously.
The salon cage settles in Bitcoin, Ethereum and USDT alongside cash and card. Wallet verification happens once at the cage — after that your ledger settles the same way as everyone's.
Deposits and withdrawals in BTC, ETH, USDT at cage rates.
Crypto settlement handled privately at the cage, not the table.
A salon ticker shows settlement rates in real time.
Above Surf Parade, an open-air deck carries dinner and cards under the sky — heaters in winter, sea breeze the rest of the year, and a horizon that never repeats itself.
Four bartenders, four house originals, one vote per guest — cast with a ceramic chip at the bar. The winning pour joins the permanent list.
Smoked rye, salted caramel, bitters — served under a glass cloche.
Gin, dry vermouth, finger lime pearl — ice-cold and unapologetic.
Macadamia-washed whisky, lemon, silk — the staff favourite.
Aged rum, coconut water, lime leaf — built for the last hour.
Members open one account for the whole house — dinner, cellar, salon and chauffeur on a single monthly statement.
Live ledger balance and accrued house points.
"The usual" — your table, your pour, your booth.
Every evening on record, with the night's menu attached.
Every night at 00:00 the house auctions one thing — tonight it is the last bottle of a 1996 Grange and the first spin of a private wheel. Registered guests bid by raising a chip.
One museum bottle, decanted by the head sommelier, plus the right to call the first spin on a private roulette session. Opening at $1,000 in $100 raises — dining room guests welcome.

The house dessert — a Valrhona sphere under edible gold leaf, cracked open tableside over salted caramel, with hand-cast white-chocolate chips you stack yourself.
The sphere is cast each afternoon — allow twenty minutes.
Unchanged since opening night — our most photographed plate.
Not at all — most guests never see a card. The restaurant, terrace and cellar operate entirely separately; the salons are opt-in and adults-only.
Lunch 12:00–15:00, dinner 17:30–23:00, terrace aperitivo from 16:00, and the salon and midnight menu until 04:00 daily.
Smart elegant after 18:00; jackets preferred in the salons after 20:00. The concierge keeps a loan wardrobe of jackets and accessories for guests caught short — see our dress code guide.
Through the concierge desk, by phone, or via the membership ledger. Degustation seats release thirty days ahead; salons hold three tables a night.
